Mexican food is so delicious. Here is a recipe that will show you how to make restaurant style chicken enchiladas in your own home. Preheat oven to 350 degrees. Spray pan with cooking spray or oil. Season chicken breasts with Mexican spice blend. Place in pan and sauté until cooked through. Turn one time while chicken is cooking. Take the chicken out of the pan and let it cool off. Microwave corn tortillas so they are easy to fold. Otherwise they will break. Spoon enchilada sauce in the bottom of a casserole dish. Shred chicken in big pieces and return to pan for a couple minutes. Add just a little enchilada sauce. Enough to moisten chicken. Add a handful of shredded mozzarella until it melts. Place chicken mixture inside of corn tortilla. Roll up and place seem down in enchilada sauce. Repeat until chicken and tortillas are gone. Spoon over remaining enchilada sauce. Bake in oven for 15 minutes on 350 degrees. Remove from oven. Let cool for a few minutes. Transfer enchilada to plate.
