This Rice Pudding is one of my favorites Boil rice in whole milk over very low heat until all milk in absorbed. This may take anywhere from 1-2 hours. Resist the urge to peek. After the rice has cooled, began whipping cream. Pour cold cream in large mixing bowl. Began beating using electric mixer or hand whisk. Electric is faster. When the cream reaches a soft peak stage add sugar and vanilla extract. Continue beating until stiff peaks form. Fold whipped cream into the rice mixture. Do this by using a large spoon. Start in the middle of mixture gently bringing bottom up to the sides and top. Continue this way until all ingredients are mixed evenly. Add the almonds.
