These cookies look like snowballs! They melt in your mouth and have very little sugar overall. Perfect for Christmas or any time of the year! The rum adds just a little flavor in place of vanilla. And since they are baked, the alcohol cooks out leaving them OK for kids! Or you can use artificial rum extract flavoring instead. Preheat oven to 325 degrees. Lightly grease one or two cookie baking sheets. Combine flour, walnuts or pecans, and salt in medium bowl. In large bowl, cream shortening and sugar with mixer. Beat in rum. Gradually mix in flour mixture. Pinch off pieces of dough about the size of a walnut. Roll into balls. Place balls one inch apart on cookie baking sheet. Bake for 12 to 15 minutes or until lightly browned. Immediately roll baked hot cookies in small bowl of powdered confectioner’s sugar. Place on wire racks. Let cookies completely cook. Rolled cooled cookies in powdered confectioner’s sugar and place back on wire racks. Let cookies sit for one hour and roll a third
