How Do You Make Sausage, Pepper, And Onion Subs?

These are quick and easy to make and the kids love them! They can easily be made lowfat as well! Add 2 tablespoons of olive oil to pan and heat on medium low heat. Brown sausage links in oil on all sides, about 3 minutes per side. Remove sausage from pan, set aside, and add a little more oil if needed. Add onions and bell peppers, and saute until soft, but not brown. Add tomato sauce and stir mixture. Bring to a bubble. Place sausage links back in pan and nestle them in the onion/pepper mixture. Add basil and/or pepper flakes as desired. Cover and simmer about 25 minutes or until sausage links are cooked through. If using oregano, add to-taste 15 minutes before sausages are done. Serve on sub rolls and enjoy!
