This is my families favorite dish at my house. You can serve it just as it is (since there’s so much in it) or serve it with veggies on the side. Everytime I make it, I come up with different ways to jazz it up. In a large pot, heat 2 tablespoons of extra virgin olive oil. Add the sofrito, peppers, onions, garlic, and tomato sauce over medium heat until liquid has evaporated and the seasoning starts to sizzle. Next add the peas, chorizo, olives, powdered chicken bouillon, salt, pepper and stir until the rice is coated with oil and seasoning and turns chalky. Give the rice one big stir until the water starts to evaporate (air bubbles should surface) turn rice once, lower heat and cover for 20 minutes. Once 20 minutes are up, add in the shrimp give rice a big stir and cook for an additional 2-3 minutes low heat. Serve with a few slices of avocado!
