How Do You Make Sherried Tomato Soup?
• Place the diced onions into the pan with melted butter. Saute until the onions become transparent. • Pour in the canned diced tomatoes and the chicken or vegetable base. Mix in well. • Add the tomato juice and sugar. Stir through. Add the salt and pepper to taste. • Raise the heat to near boiling. Once at this point, remove from the heat. • Pour in the sherry and cream. Stir through. • Add the parsley and basil. While optional, these add a distinctive freshness and lift to the soup. Taste and adjust seasonings if needed. Serve. Add a drizzle of yogurt, or grated cheese, or fresh herbs as a garnish. This soup goes well with warm crusty bread or toasted quesadillas.
