How Do You Make Shredded Chicken Tacos?
Most people like tacos, but eating them with greasy ground beef and then topping them with sour cream and cheese can really turn out to be an unhealthy meal. For a healthier taco option, go with shredded chicken. I just made these last night, and they were delicious and healthy. Thaw your chicken. Get your crockpot out, plug it in, and turn it on high. Add your chicken to the crockpot. Add the entire jar of Pineapple Mango Chipotle Salsa. Stir the chicken and salsa, so all of the chicken is evenly covered. Cook on high, in the crock pot for 5-6 hours. Dice your red pepper. With 5 minutes remaining in your cooking time, add the red peppers to the chicken. Dice your tomatoes and lettuce, and warm your taco shells in the oven. When your chicken is done cooking, shred it with two forks until it is your desired consistency. The chicken should be quite tender and shred easily. Put your taco together! Layer the chicken, lettuce, tomatoes, etc. into your taco shell and Enjoy!!
