When baking chicken, it is easy to allow the chicken to become dry due to the dry heat of the oven. To prevent the chicken from drying out, use a broiling pan where water is added to the bottom and will keep the chicken moist. Defrost and wash each chicken breast. Season each piece lightly with salt, pepper and garlic powder. Fill broiler pan with 1 cup of water. Position the chicken breasts on the broiler rack and cover with foil. Carefully place the chicken in the oven at 350 degrees for 10 minutes. Remove chicken from oven and baste one side with BBQ sauce. Replace the foil and continue to bake for 10 minutes. Remove chicken from oven again and turn over each piece. Baste the other side with BBQ sauce and return to oven for another 10 minutes. Remove chicken and baste both sides, then cover again with foil. Allow the chicken to “rest” while it soaks in the last coating of BBQ sauce.
