This meatless recipe can make a great edition to any vegetarian’s menu. Grease skillet with cooking spray and add chopped onion. Heat over medium heat a couple of minutes. Add tomato sauce, soy protein crumbles, and basil. Also, add a few shakes of salt if you want. In a separate bowl, mix ricotta cheese, parmesan cheese, and 2 cups of mozzarella cheese. In your slow cooker, add about 25% of your skillet mixture. Place 4 lasagna noodles on top, breaking the noodles so that they fit in the slow cooker. Pour about 1/2 of the cheese mixture on top of the noodles and spread to cover. Repeat the layers: 25% of skillet mixture, 4 noodles, 1/2 cheese mixture.
