This is a recipe I adapted from an employee holiday cookbook. It has quickly become my husbands number one requested meal. It is easy and very delicious. The chicken takes very little time to cook and the broccoli maintains a nice crunch. In a small bowl combine peanut butter, water, soy sauce, rice vinegar, and sugar. If the peanut butter is hard and will not combine easily, microwave for 30 seconds to soften. Mix thoroughly and set aside to marinate. Using a wok or a large skillet, heat oil over high heat and add garlic and pepper. Allow to sizzle for 30 seconds then add chicken. Stir-fry until cooked thoroughly, approximately 5 minutes. After chicken is firm and white, add broccoli and cook until bright green. Stir in the peanut sauce mixture and reduce heat. Stir constantly until mixture is smooth and the broccoli is tender but still crisp. Voila!
