Here’s an easy recipe for spinach and mushroom quiche that should take about 20 minutes to prepare and 30 minutes to bake. Saute onions, garlic and butter in skillet over medium heat until onions soften, or about three minutes. Add mushrooms and spinach to pan with a bit more butter, and saute for another seven minutes. Beat milk and mayonnaise until creamy. Beat eggs in separate bowl until fluffy. Combine eggs, mayo and milk and whisk until blended. Add salt and pepper to taste. Remove pan from heat and add onion, spinach and mushrooms to the egg mixture. Stir until blended. Mix in half of the shredded cheese. Pour mixture into unbaked pie crust. Top with remaining cheese. Cover pie crust with foil and bake in pre-heated 375 degree oven for 30 minutes or until a knife inserted in the center of the quiche comes out clean.
