This is one of our favorite recipes. It’s easy to make, healthy AND tasty. It’s made with reduced fat ingredients and only two egg yolks. You can substitute or mix the spinach with any vegetables you prefer or happen to have around. To keep prep time down, we use pre-made pie crusts, jarred mushrooms and dried, minced onions. It refrigerates and reheats well. Prep time is about 30 minutes and makes 8 servings Preheat oven to 350 degrees. Line ungreased pie pan with pre-made pie crust. The pre-made crusts add ~110 calories to each serving of quiche. If you’d like to reduce the calories even further, there are reduced fat pie crusts available. In the interest of saving time, we don’t do anything fancy with the edges of the crust. If you are serving the quiche for guests, you can finish the edges. Beat together eggs, milk and flour.
