This is an age old recipe that I inherited from my grandmother. This is fairly easy and so delicious! The Strawberry flavor is wonderful, and combines with the sweetness of the figs to perfection. Wash fresh figs, and drain in collander. Remove any woody stems. Place figs whole in large pot, add 6 cups Sugar. Cook on low/med heat for 15-20 minutes, stirring continuously. Feel free to smash figs. They will fall apart naturally with the heat from cooking, but smashing speeds the process. Heat figs to boiling stirring constantly, bring to a good rolling boil. Remove from heat. Add large package of strawberry jello all at once, stir until mixed well. Add fig mixture to jars, clean tops and add lids and seals. Be careful, this is extremely hot and will burn. Turn hot jars upside down, until cool. Store in refrigerator once cooled. If desired the jars can be sealed in a traditional water bath.
