Stir fry chicken in the oil until just cooked and remove from heat onto a separate plate. Add 1 tbsp of oil and stir fry 1-3 cloves garlic minced (or a tsp. crushed), 2 tsp. diced ginger, and 1 & 1/2 cups chicken broth. Bring to boiling, de-glazing the pan. Add 6 cups of diced vegetables (broccoli, snow peas, sweet peas, bell peppers, boy choi, or carrots) Cook until crisp. Return the chicken to pan and add sauce. Cook until sauce thickens, stirring constantly. Serve over brown rice.
