Fresh cucumbers straight from the garden can’t be matched. But, if you have an over-abundance of cucumbers you may be wondering what you should do with them all. Making sweet cucumber relish is quick and easy and is sure to be appreciated the next time your in-laws arrive for a BBQ. Step 1 Wash and grind cucumbers, carrots, onions and green peppers. A food grinder works well for this, but you can use and grater or a blender as well. All vegetables should be ground to the same consistency. If you use the blender use care not to puree the vegetables. Relish should have plenty of texture to hold flavor. Step 2 Place the ground vegetables in a large bowl and mix thoroughly. Place in the refrigerator for two hours to blend flavors. Remove and pour into a colander to remove excess water. Step 3 Mix sugar, vinegar and spices in a saucepan over medium heat and bring to a boil. Add the vegetables, stir and return to a boil. Reduce heat and simmer for 30 minutes. Step 4 Pour into hot sterilized
