Sweet Potato pudding is a delicious holiday recipe that is great to serve for Thanksgiving or Christmas dinner. This version is flavored with brandy. Preheat your oven to 375 degrees fahrenheit, and grease a 1 1/2 quart casserole or baking dish. Cut the sweet potatoes into chunks. Boil them until tender. Drain and then peel them. Mash the boiled and peeled sweet potatoes with five tablespoons of the butter or margarine, using an electric mixer. Beat until the potatoes are smooth.
