Preheat your oven to 375 degrees fahrenheit, and grease a 1 1/2 quart casserole or baking dish. Cut the sweet potatoes into chunks. Boil them until tender. Drain and then peel them. Mash the boiled and peeled sweet potatoes with five tablespoons of the butter or margarine, using an electric mixer. Beat until the potatoes are smooth. Add the two eggs, the heavy cream, the brandy, the lemon peel, salt and pepper. Beat with the mixer until everything is blended together. Spread the sweet potato mixture in the baking dish.
