How Do You Make Sweet Potato Rolls?
This is a sweet potato roll recipe that I learned from my grandmother. She has made these super yummy rolls for Thanksgiving and Christmas every year for as long as I can remember. These are very easy to make and any unused dough will keep in the refrigerator for up to a week. In a small bowl, mix the yeast, a sprinkle of the sugar, and warm water. Set aside. In a large bowl, mash the sweet potatoes. Mix in the milk, oil, sugar, and salt. Add in the yeast mix from step 1. Knead in the 8 to 10 cups of flour. You want the dough, as my grandmother told me, “sticky but not too sticky.” Let the dough rise for about 2 hours. Now, at this point, you can refrigerate the dough for later use. Refrigerated, the dough should keep for up to a week. Preheat oven to 350°F. Punch down the dough. Shape the dough into rolls and place on a greased baking sheet. Let the rolls rise for about 40 minutes. Bake rolls for about 10 minutes or until browned.
