How Do You Make Sweet Potato Soup?
This is a great filling soup to make on a cold day that will still be easy on the waist line! I came up with this one day when looking through the fridge wondering what I wanted to eat, not finding anything… Then suddenly, this happened! It was a wonderful comfort food, but wasn’t calorie laden like a typical comfort food; I was in love! Bring to a boil 3 cups of water. Add 1 cube of chicken bullion and 1 cube of tomatoe bullion. (Whole cubes, not just servings). Add 1-2 thinly sliced carrots and 1 med-large sweet potato diced. Chop up 1/3 of a cup of fresh cilantro and a 1/3 of a cup of fresh parsley, add to soup. Boil for roughly 15 minutes. Add 3/4 – 1 cup (I prefer 3/4) Spinach and ricotta tortellini. Boil until tender (around 13-14 mins). (If you use any that are not dry packaged, cooking time will likely change). Serve sprinkled with Parmesan cheese and oyster crackers!
