The first time I had this salad I instantly fell in love with it. I experimented to make my own version of this salad and was extremely pleased with the outcome. This healthy salad is perfect for lunch, but personally, I would gobble it up anytime of day! If you prefer a less sweet salad, add more balsamic vinegar. This recipe makes 4 servings. Whisk the olive oil, Dijon mustard, maple syrup and balsamic vinegar together in a cup. Do a taste-test, adding more balsamic vinegar if you desire a less sweet dressing.
