So, I popped in and got one with some pocket change, and I was hooked. Of course, I was craving more. So, I decided to make them at home. These are so easy, and they were a real hit with my family. Fry potatoes. You can really use any fried potatoes, but Taco Bell crispy potato tacos have little diced potatoes. You can use a microwaved baked potato that is cut up and fried. I have also used frozen hashbrowns. The point here is Crispy and fried. Soften the tortilla shells for a few seconds in the microwave. Place cheese, hot potatoes, lettuce and a little mayonnaise in tortilla. Fold and enjoy! You could do a little differently, if desired. You could use sandwich cheese, hot sauce, or tomatoes to make it your own.
