How Do You Make Tasty Stuffed Green Peppers?
When green peppers are in season, stuffed green peppers are an economical, tasty idea for supper. They take a bit of work but it’s definitely worth it. Choose green peppers that are large and flat on the bottom. Brown hamburger in skillet over medium heat. Chop up two cloves of garlic along with one small jalapeno and add to hamburger. While the hamburger is cooking, prepare the rice and clean the green peppers. Slice off the top of the peppers and clean out all the seeds. Drain the hamburger and return to the pan. Add the rice and the two cans of medium Rotel tomatoes. Put a half a cup of water and squeeze the juice of one small lime into the mix. Simmer the hamburger rice mix on low for fifteen minutes. Once the mix is done, fill the green peppers with the hamburger rice mix and place in a baking pan. Place any extra mix in the bottom of the baking pan.
