The key ingredients in this recipe are lemongrass, lime leaves and tom yum paste, which are relatively inexpensive and which you will need to visit your local Asian groceries for. Slice lemongrass stalks into two inch pieces (so they’ll be easy to remove from the soup later). Fill a pot with about 6 cups of water or chicken broth. Set temperature to high and add the lemongrass chunks, lime leaves, a dollop of fish sauce, a dollop of tom yum paste, the juice of 3 limes, and a chicken bouillon cube. Once water boils, turn heat to medium-low and simmer for 30 minutes. Add the thinly sliced chicken and bring water to boil. Simmer for 10 more minutes or until done. Remove the pieces of lemongrass stalk and lime leaves with tongs. The soup is now ready to serve.
