Most kids and adults love tomato soup, but this tomato and potato version can thicken and enhance the traditional soup. Chorizo is optional. However, try pouring the soup over the broken tortilla chips to give it the pizazz of tortilla soup. Hot pepper adds an additional kick. In a large pot, mix 6 cups of tomato juice with cubed potatoes, minced pepper, salt and chorizo. Bring to a boil, then simmer on medium to medium low until potatoes are almost tender, about 20 minutes. Stir in 2 tsp coriander. Simmer on low to medium low as long as you wish. Ladle over broken tortilla chips in bowls. Have finely chopped onion and cilantro available in smaller bowls for garnish, as needed.
