Step 1 In a large pot, melt 1/2 Stick of butter over medium heat. Stir in 1/2 C flour and cook, stirring often, for 3 minutes. Slowly whisk in small amounts of chicken broth at a time until you’ve stirred in 3 Cups total, then whisk in 1 C of evaporated milk. Reduce heat to low and stir in 8 oz. of cubed Velveeta Cheese. Stir until melted. Step 2 Stir in a 10 oz. can of Ro-Tel tomatoes and chilies, 2 C cooked shredded chicken breasts, 1 t. cumin, and 1 t. chili powder. Add salt and pepper to taste. If you want the soup more spicy, add some Cayanne pepper to taste. Once soup is hot and ready, reduce to very low heat, stirring occasionally, while you make the tortilla strips.
