I am not of Mexican descent, but I worked with a wonderful lady who would often bring in some terrific Mexican food. One of my favorites was her Chilaquiles Casserole. It was always a big hit with all of my coworkers and we couldn’t wait to dig in to it. Along with a glass of horchata (rice drink) we would just be completely satisfied! You can make this dish spicy or you can make it milder, depending on whether or not you like chile! Cut tortillas into small squares and fry them in oil until they are crispy. Season with garlic salt and parsley to taste. In a saucepan combine all sauces and bring it to a boil. Once tortillas are crispy put them in the sauce pan and stir until your mixture is simmering. Remove from heat and pour into a baking dish. Then add your grated cheese evenly over the mixture while still hot and then serve!
