Tuna salad sandwiches make a quick and easy dinner to fix. The only cooking required is boiling the eggs. A healthy diet should include two or three servings of fish a week and tuna salad sandwiches are a good way to fulfill that requirement. Fill a small saucepan with cold water and place two eggs in it. Set the timer for 20 minutes. Chop the celery stalk into bite size pieces while the eggs boil. Remove the saucepan from the stove and place in the sink once the eggs have boiled. Cool the eggs by running cold water over them and letting them set for a few minutes. Peel the eggs and chop them up. Drain the tuna and place in a bowl. Add 2 teaspoons of dill relish, the celery and the eggs. Mix thoroughly. Add 1 – 2 tablespoons of mayonnaise stirring after each spoonful. Be sure to add the mayonnaise last because the dill relish is juicy and too much mayonnaise will make the tuna salad soupy. Salt and pepper the tuna salad to your taste. Toast the bread and spread the tuna salad over it.
