When your turkey is close to being done, collect as much of the drippings as you can with a ladle or a turkey baster, and tranfer to a wide bowl.You’ll want to use a wider bowl so the juice can cool faster. Cover the bowl with plastic wrap, and put it in the fridge for a half hour or so. The point is to try to get as much of the fat solidified and risen to the top of the bowl, where you can then scrape as much of it as possible off with a spoon.
