This will go on top of the pastry. • Grease and flour a flapjack oven tin. • Roll out the ready-made vegan pastry to fit the oven tin. • Place the pastry into the oven tin. • Spread apricot jam on top of the pastry. • Pour the almond mixture on top of the pastry and spread evenly. • Bake in a hot oven at 180ºC (356ºF) for 30 minutes, or until it is bouncy to the touch. • Remove from the oven and leave to cool down. Then remove it to a cooling rack. • Add vanilla essence and enough cold water to the powdered sugar to form a thick paste. Once the slice is cooled, spread with icing. • Place the glazed cherries evenly across the top of the icing. • Cut into slices. Serve and enjoy.
