How Do You Make Vegan Potato Salad?
Hey vegans! Don’t you miss potato salad? This one is easy (half the ingredients are even optional) and you can put it in little plastic containers so it feels like you bought it from the store 😉 Boil six cups water in a pot. Leaving the skins on, chop the potatoes into small chunks and throw them in. Boil for 15 minutes, then turn off heat and let sit for 10 minutes or until soft but not mushy. Strain and put them in a large bowl. Chop the celery and pickles into small pieces. Add these to the potatoes after letting them cool for a few minutes. Add bell peppers and cilantro.
