How Do You Make Vegetable Beef Soup?
Homemade beef vegetable soup is healthy and hearty, and so filling that it’s a one-dish meal. Add a loaf of crusty bread or rolls for a complete dinner. If you have leftover soup, re-heat it the next day. You’ll find that homemade beef vegetable soup is even better the second time. Coat the chopped beef ribs lightly in flour. Place them in a dutch oven with heated olive oil and add the chopped onion and garlic, and sauté the mixture until the meat is brown and the onions are translucent. Remove the beef ribs and set them aside on a plate. When the ribs cool enough to handle, remove the meat from the bones. Add 2 tbsp. flour to the dutch oven. Stir until the mixture thickens and is cooked through. Return the meat to the dutch oven. Add the vegetables, bay leaf, Worcestershire sauce and the beef broth and simmer the mixture for approximately 4 hours. Add salt and freshly ground pepper to taste.
