Trying to find a delicious dish that is fast, easy, and cheap?!? This is it! This is my take on traditional chicken enchiladas that i loved growing up. First preheat oven to about 335-350 degrees. Then Line the bottom of the pan or dish with 4-5 corn tortillas….enough to pretty much cover the entire bottom of the pan/dish. Next scoop in the chicken and spread it evenly across the tortillas. Than, if you choose to….add the green chilis, evenly. Next, Chop up onion (if you’d like) and spread evenly. Take grated cheese and again….spread evenly. Almost done! Next, cover with 4-5 corn tortillas, spread to cover the entire top of the fillings. Chop more onion on top (if you’d like…i love onion), put more grated cheese, and pour the enchilada sauce over the top. Now all you have to do is put it in the oven and bake for only 25-30 minutes! or until the edges start to get crispy and the cheese is completely melted.
