If you love seafood and tofu products, the fried shrimp bean curd wrap is great appetizer for you. Although they serve these in Vietnamese restaurants, it is fun to prepare these in your kitchen plus maybe saving you some money. Rinse clean and devein shrimp, then dry thoroughly with paper towels. Using a food processor, blend garlic, ginger, shrimp, white pepper, 2 teaspoons lard or cooking oil into a smooth paste. Transfer the shrimp mixture into a bowl. Beat the egg white until frothy with an electronic hand beater. Blend the beaten egg white with the shrimp mixture with beaten egg until smooth. Add chopped scallion to the shrimp mixture, then divide into four equal portions.
