Zucchini bread is a healthy treat for the whole family and kids love it as a snack food. Preheat the oven to 350 degrees. Grease the bottom and the sides at least half-way up on a loaf pan. Shred enough of the zucchini to make one cup. The zucchini does not have to be peeled. Get a large mixing bowl and mix the flours, cinnamon, baking soda, baking powder, ginger and salt together. In another bowl mix the egg, sugar, oil, and lemon peel. Stir the shredded zucchini into the egg mixture and add this mixture to the bowl that has the flour mixture in it and mix it up well. If you wish to use chopped walnuts, this is where you will add those. Pour the entire mixture into the pan that you have prepared and bake for between 55 to 60 minutes. A wooden toothpick stuck in the center should come out clean. Cool the bread in the pan on a wire rack for about 10 minutes before removing it from the pan. Continue to let the bread cool completely.
