Blackberry jam is a wonderful way to preserve blackberries for the winter months. I use wild blackberries from a nearby field that is not sprayed with pesticides. The blackberry jam is better than anything you can buy at the store! Place the blackberries and sugar in a large stockpot. Cook the berries and sugar over medium low heat. It should be at a slow boil for 35 minutes. After 35 minutes, the mixture should begin to thicken. Ladle the hot blackberry jam into sterilized canning jars. Using a jar funnel makes this process easier. Leave 1/2 an inch of space in the top of each canning jar. Seal the jars with sterilized lids and rings. Place the jars of blackberry jam in a water bath canner and process for 20 minutes. Remove the cans from the canner and allow them to sit undisturbed overnight. The jars should seal after they cool. Check to ensure each of the jars have sealed by pressing on the top of the jar. Label the jars “blackberry jam” and include the date it was prepared. Blackbe
