You may either place 1 cup of flour in a bowl then season with salt and pepper to taste; or place flour in a bag (plastic or paper), seasoning to taste. Heat frying pan with 1/4 cup of cooking oil on medium to medium high heat. Season chicken with salt, pepper and garlic salt. Dip into batter, covering chicken well.Flour. Shake off excess flour. Repeat batter and flouring. Shake off excessflour. Place chicken pieces in frying pan without touching other pieces. Fry until golden brown, turn over. Remove and place on platter with paper towel. Repeat for remaining pieces of chicken. Serves 6-8.
