Grease loaf pan or a deep ceramic casserole dish ( not larger than 8 inch. diameter) and set aside. Mash up one ripe banana. We freeze bananas and thaw them out when we are about to make banana bread. They are extra ripe and mash easily!! If not just use one that is soft and ripe off the counter. Combine everything needed for bread mix in a large bowl. Add Chocolate Chips and mashed banana. Combine well. Pour into pan and bake for 45 minutes. Top should be golden brown. Let it cool completely and dust the top with powdered sugar. Serve with a scoop of vanilla bean ice cream if you like!
