This will remove dirt and debris trapped on the skin. Hold the mango with one hand. Place the mango on the cutting board so that it stands on its end. The stem side of the fruit will be facing down. Cut one-half of the mango. Visualize the oval pit inside the mango. Begin cutting at the top of the mango down one side of the pit. Repeat the cut on the other half of the mango. You will now have three pieces that consist of two halves and the center that contains the pit. Cut cross sections into one-half of the mango. Do not cut through the peel when making these cuts.
