(You will need to prepare this the day before.) • Preheat oven to 375 degrees. Take a large bowl beat eggs on high for five minutes. Gradually beat in the sugar.Then mix in the canned pumpkin. • Use a medium bowl and combine the sifted flour, baking powder, cinnamon, ginger, and salt. • Fold the flour mixture into the pumpkin mixture.Spread the batter into a 12″x18″ jellyroll pan lined with the waxed paper. (Spray sides with Pam or similar spray.) Sprinkle with finely chopped nuts. • Bake for 12-15 minutes. • Spread out the flour sack towel and sprinkle with the powdered sugar while baking, • Run a knife around the edges to loosen from the pan after it is finished baking. Turn the pan upside down on the flour sack towel. The cake should drop out of the pan. Remove the waxed paper. • Fold the towel over one end of the cake and roll up w
