If you would like to serve your soup (pumpkin usually!) in a pumpkin shell, it is quick and easy to prepare the shell. • Place the pumpkin into a steamer large enough to hold it. You might need to purchase a larger steamer holder, or even use a bamboo steamer sitting over a stock pot. • Steam until the pumpkin starts to soften. You don’t want to cook the pumpkin, just soften it so that it feels soft to touch on the outside. • Remove from the heat. Cut off the top of the pumpkin when cool enough to handle. • Remove the seeds and with a good, solid knife, carve out the flesh to about 2″ or 5 cm to the edge. Leave enough to maintain the shape and strength of the pumpkin shell; the edge left might depend on the type of pumpkin used. Pour in the soup and serve. It is a good idea to place the pumpkin in a large, low bowl, in case it leaks. Place the soup ladle next alongside the soup.
