How Do You Prepare Authentic Mexican Tacos?
Don’t even ask what brand of seasoning mix is used for tacos made at my house. They are homemade from scratch without packaged ingredients. Years ago while vacationing in Mexico, a kind elderly native lady gave away the secret of authentic tacos. It takes a bit longer, but well worth it when the family tastes that first juicy bite. This recipe feeds four-six. Peel and finely grate the potato. Dice a medium onion. In a large skillet, medium heat, add a small amount of cooking oil. Add the grated potato, stirring to keep from sticking together. When the potato begins to lose its raw appearance, add the onion and stir until the pieces become almost clear. The potato will help absorb the meat’s grease and can hardly be detected in the finished product. It is also a filler for the meat mixture to go further. Cut in at least one pound of ground meat to the cooked potato and onion and stir until meat is done. If using fresh garlic, add it here. Spoon out excess grease. Stir in a regular size
