Step 1 Place one catfish fillet in the center of a piece of tin foil large enough to cover the fish, fold over the top and crimp the ends. Step 2 Sprinkle the fillet with salt and pepper and a generous amount of dill. Pour about one tablespoon of lemon juice over the fillet. Step 3 Cover the fillet with a layer of the finely chopped onions. Add a layer of chopped Roma tomatoes. Place two pats of butter or margarine on top of the tomatoes. Fold the tin foil over the top of the fish leaving enough room for air to circulate. Crimp the edges shut. Cut two 1 inch slits in the tin foil. Bake at 350 degrees for 30-35 minutes. Step 4 While fish is baking, cook rice. When fish is done, remove from oven and let sit for a couple of minutes before opening to avoid a steam burn.
