This recipe for leftover baked potatoes is simply delicious. It is great served as a side dish with a main meal or as a main dish served with a side salad or green vegetable. In this recipe I have used individual serving dishes, but the recipe will work just as well in a large casserole or baking dish and spooned into individual servings. Preheat oven to 400 degrees. Fry or microwave bacon, cool and crumble, or you can use market purchased prepared salad bacon bits. Cut baked potatoe(s) into cubes and place in baking dish. I leave the peelings on mine, but you could peel them if you prefer. Add salt and pepper to taste. Top cubed potatoes with slices butter, ranch, cheese and bacon bits. Bake in 400 degree pre heated oven until ranch is bubbly and cheese is melted. Remove from oven. Let cool slightly and serve.
