How Do You Prepare Moms Texas-Style Zucchini Bread?
Zucchini bread–you’ll “loaf” it. Combine dry ingredients and pecans, then set aside. Beat eggs, adding oil, sugar and vanilla, then beat until creamy. Stir in zucchini and pineapple. Add dry ingredients, stirring until everything dry has been moistened. Spoon into 2 well-floured and greased loaf pans. Cook for 1 hour at 350 degrees. Makes 2 8x4x3-inch loaves.
