Evenly distribute the pumpkin seeds on the cookie sheet. Make sure that they are in a single layer for optimal roasting. Lightly roast the pumpkin seeds in the oven at 350 degrees F for about 20 minutes. Use a spatula to flip the seeds over after about 10 minutes so both sides of the seeds roast. Check the seeds periodically toward the end so that they do not burn. Remove the roasted pumpkin seeds from the oven when they are golden brown.
