The method of salting was used to preserve the fish for long periods of time as was done when European fisherman transported the fish to the New World. Today Salted cod is used regularly in African, Caribbean & South American dishes. Some actually prefer this salted fish to fresh cod. Step 1 Soak the Cod Rinse and soak the cod between 12-24 hours. Those who enjoy a bit saltier flavor usually soak between 12-15 hours. Step 2 Prepare Vegetables Finely chop the onions & garlic and place to the side. Step 3 Boil the Fish Fill your pot with water and add the soaked fish to it. Bring to a rolling boil for about 10 minutes. Next, drain the water and set aside. Step 4 Sauté Veggies Add about 3/4 C. of Extra Virgin Olive oil. Sauté your garlic & onions for about 2 minutes Next, crumble the fish into bite size pieces and add to pot. Blend thoroughly with onions, garlic & oil. Then add Vinegar, Italian and Sazon seasonings. Step 5 Simmer & Serve Once all ingredients are blended, Cover and Simmer
