How do you prepare the chicken for chicken salad sandwich?
CHICKEN SALAD SANDWICHES 1 c. finely chopped cooked chicken 1/4 c. finely chopped celery 2 hard cooked eggs, chopped 2 tbsp. sweet pickle relish 1/4 tsp. salt Dash of black pepper 1/3 c. mayonnaise 3 tbsp. softened butter Sandwich bread Combine first 6 ingredients. Spread softened butter on bread, then spread salad mixture on bread and cut into desired shapes. Chill in covered container until ready to serve.
Try cooking a whole chicken cooked breast down in a roaster with a cover, at 325 degrees for 3 hours. Take the chicken out, turn it over and carefully cut the breast off. Mix it with mayo and finely chopped celery and let it ‘sit’ in the refrigerator for at least 4 hours before making your sandwich. There is a combination of things that make the chicken ‘soft’ and this should work if you do it properly. BE SURE to use a roaster that comes with its own lid and use that lid … you can use foil tightly squeezed, but that will let some of the ‘moisture’ out of the roaster … and ALWAYS cook your bird with the breasts DOWN to get the ‘softest’ (tenderest) white meat possible, either for dinner, or for making good sandwiches.
