This easy recipe for chocolate mousse serves 6-8 people. You will need a double boiler for this chocolate mousse recipe. In the top of the double boiler, melt the chocolate with the coffee. Remove top of double boiler from heat and let cool after melting. Beat the egg yolks, yellow only, until they are lemon-colored. Add the beaten egg yolks to the chocolate mixture and blend well. Beat the egg whites in a separate bowl until stiff, but not dry. Add 1 Tbsp of sugar to the beaten egg whites. Add 1/3 of the egg whites to the chocolate, then add flavoring, rum or vanilla, either choice. Then continue to lightly mix in the egg whites. You can distribute the mousse to individual serving dishes or to one bowl. Chill for at least 8 hours before serving.
