Microwave eggplant about 5-10 minutes until flesh gives slightly, remove and let sit for another 5 minutes to finish baking. Microwave potato for 3-5 minutes until soft, then let sit 5 minutes. Slice eggplant lengthwise, scrape out flesh, leaving 2 eggplant bowls for stuffing. Peal sweet potato and chop up. Heat sesame oil in fry pan, toss in eggplant, potato, onion, garlic, bell pepper, rosemary, basil, thyme and oregano. Stir fry all until onions are translucent. Beat one egg and stir into mixture, divide in half and stuff into each eggplant shell. Divide 1/2 cup of Parmesan cheese and sprinkle over stuffed eggplant mixture, top each with half the bread crumbs then top each with marinara sauce and final 1/4 cup of Parmesan cheese divided.
