When you saute vegetables, it means that you are going to cook them in a large skillet over medium heat in some sort of fat (either butter or oil). For stuffing, it is delicious to cook the vegetables in butter because it gives a more home-cooked flavor to your stuffing.

Dice the onion and thinly slice the celery. You should make them all relatively the same size.

Turn on the stove and melt your butter. Once the butter is melted, add your vegetables (they should sizzle). Add a pinch of salt and a pinch of pepper. Shake the pan around so that the vegetables cook evenly. Take out a wooden spoon and give them a stir so that they all evenly cook but none of them burn. Cook until the onions are translucent.
